Quick & Easy Spoon Rolls

Nothing says frugal like making your own homemade rolls! And, they are sooooooo much better than the processed stuff you buy at the grocery! Give 'em a try. They're super easy, and so yummy!

3 3/4 packed cups all-purpose flour
1/4 cup sugar
2 1/4 tsps (1 package) Rapid Rise Yeast
1 1/4 tsps salt
2 cups water
1/2 cup unsalted butter
1 large egg, slightly beaten

In large bowl, whisk together flour, sugar, yeast and salt. On stove or in microwave, heat water and butter together until butter is melted and mixture is 120 to 130 degrees. With dough whisk or large wooden spoon, stir into flour mixture along with beaten egg until blended. The dough will be very sticky. Cover and let rise until doubled, about 35 to 45 minutes.

Stir down dough (just a few strokes). With a 1/4 cup measure, scoop dough into well-greased or cooking-sprayed muffin tins, filling two-thirds full. Let rise, uncovered, 20 to 30 minutes, or until dough has risen to the top of the cups. During last 15 minutes, heat oven to 400 degrees.

Bake 20 minutes, or until rolls are golden brown. Let stand 5 minutes before removing from tins (if you can wait that long!).

Fridays With Faith: Mam-Maw Holland's Special Valentine

Faith's 50th Birthday Party (her last birthday on Earth)

I thought it'd be fun to share a Valentine's story written by my momma. I'm pretty sure this story was based on something that really happened in her family.

Mam-Maw Holland's Special Valentine by Faith

Ross and Grace were contentedly sitting around Mam-maw Holland's round oak table. They had pretended to draw a line down the middle of the antique. On one half, Grace had valentines, envelopes, class list, and a pink writing pencil. On the other half, Ross had his valentines, envelopes, class list, and a red writing pencil.

Daddy had brought the children to their grandparents, after school. Mother's oldest sister, Aunt Dorothy, had called that morning before the children had gone and left a message for Grace and Ross. She had purchased their desired valentines and left them at Mam-maw Holland's house. Momma 'phoned the grandmother and upon mutual agreement, the children were to go for a short visit.

Ross and Grace were talking as they pondered over the difficult task of choosing valentines for their classmates. Grace checked names off her list.

"Ross, I just can't see wasting a lovely card on that smelly ol' Jean!

Ross shook his head in agreement. "I agree, Sis, I was thinking of passing over Herman, too."

Mam-maw listened to the children's conversation and if you looked closely, you could see the 'thought-wheels' turning rapidly.

"Children," she called, "how much longer until you're finished?"

"I'm done, Mam-maw," answered Ross.

"Just two more and I'll be finished, too, Mam-maw," echoed Grace.

"Good, when you're finished, come and sit with me on the couch. I have something to show you," the grandmother said.

Within a short time, Grace and Ross were cuddled beside their grandmother. They were curious over the old fashioned album in Mrs. Holland's lap. Grandmother's wrinkled rose-petaled hands turned the yellowed pages of the album.

"Someday I'll explain each photo but there is one I want you especially to see," Mam-maw turned a few more pages. "Ah, here it is."

Ross squinted carefully at the picture.

"That's a little girl with a pig.... a black and white pig."

"That's me and my pet pig, Oscar. Listen, I'll tell you about my pig."

Mam-maw eased back against the couch, her eyes clouded in memory.

"I was a little mite of a girl.... the youngest of a large family. It was Valentine's Day and the lack of candy and cards hadn't bothered my brother and sisters but it certainly darkened my day! My daddy felt my sorrow, deeply, and set out to find me a valentine.

"After school, daddy met me at the door. 'Pearly Mae', he said, " I have a very special valentine for you. Come and see."

My heart jumped for joy and I clasped my father's hand as we walked to the barn.

"Here's your valentine, Pearly Mae. Now, take good care of him."

Daddy opened the stall door and around the hay-lined room ran a tiny black and white pig. I was thrilled! I bathed him and put a red ribbon around his neck. How my brother, Woody, teased me about Oscar. He just rolled on the ground in great mirth when he observed my efforts to keep that pig clean! It became a big family joke to tease me over needing Oscar for bacon and ham. Even my beloved father would become irritated over the factor that Oscar would not come to the familiar call of 'Suey'. Oscar would only come when you whistled. Everyone was getting tired of my big smelly pet and I dreaded the day when Oscar would be sent to market.

Late one evening, Oscar awoke the entire household with his pawing on the screen door and his squealing. I ran down the stairs and tried to make him, 'hush'. Daddy came down in his night cap and gown. My, was he angry! It was then we heard the geese call out. Daddy and Woody grabbed their shot guns and ran for the hen house. Their shots echoed through the crisp, spring air.

"Foxes," daddy replied when he walked into the house. "Four foxes! If it hadn't been for Oscar's warning, all our chickens, ducks, geese, and turkeys would be gone."

Woody chuckled and replied, "That smelly old Oscar is a hero. Don't worry, 'Champ'," and he pulled my long braid, "no one is going to touch your 'Valentine', now!"

"And you know, children, " mused their grandmother, "that pig became a fox alarm. My father bragged all over the country-side about the amazing Oscar."

"You're teaching us, aren't you, Mam-maw?" Asked Ross.

Mam-maw smiled. "Yes, I told you this story about my 'special valentine' in hopes that you'd right a wrong. My pig was shunned by my family and they all made fun of him... yet, I loved him. When Oscar saved all our poultry, everyone forgot his faults and saw only the good. Those children in your class may be dirty and a few may be poor... but no matter what the excuse for being unpopular, they are greatly loved by the Beloved. Now, you are BOTH Christians!" The grandmother paused, letting her words sink in.

"Oh, Mam-maw," said Grace. "I see now! Oh, I am so ashamed. Everyone is greatly loved by Jesus. As Christians, we are to be like Jesus."

Ross added, "So, we should love like Jesus. Grace and I should love the unlovable. We shouldn't wait for our unpopular classmates to become popular before we associate with them. We need to show them love, now."

"Come on, Ross. We need to get back to the table and address some more valentines," said Grace.

"Yes, and lets pray that we are never hateful to people who are different, again." Said Ross.

Together they went back to the table to right their wrong, singing as they addressed their cards,

Red and yellow, black and white
They are precious in His sight.
Jesus loves the little children of the world.
