Homemade Peanut Butter

One of my favorite snacks for a little protein pick me up is peanut butter. My kids love it too, and they especially enjoy it when I do the 'Peanut Butter Jelly Time' song for them when making their lunch. Don't worry, I won't be posting any videos of that on here. ;)

I love natural peanut butter. Yes, the type with added sugar is yummy too, but it also has...wait for it...added sugar. So, to make it healthier, I stick with the natural type: peanuts, salt, and a little oil.

I finally took time to transform one of my $0.50 jars of peanuts into homemade peanut butter yesterday. A 16 ounce jar of shelled lightly salted peanuts turned into nearly 16 ounces of all natural peanut butter.

How'd I do it? I put about a handful of peanuts at a time into my blender, put the cover on, and hit the 'Chop' button. Seconds later, I ended up with pulverized peanuts.

I repeated this until I had chopped the entire jar of peanuts. Then I poured about half the chopped nuts back into the blender and added 1 Tbsp of EVOO, and mixed. This made the peanut butter creamy. I spooned the peanut butter into a clean jar, and mixed the other half of the chopped nuts in the blender with another Tbsp of EVOO.

It took me about 30 minutes to prepare, and it only cost me $0.50 for the jar of peanuts, and however much you want to guess for 2 Tbsp of EVOO. I bet you can't buy natural peanut butter that cheap! Trust me, I've looked.

The final product:

The pictures aren't great, but I wanted to try to give some kind of visual. The peanut butter should stay fresh for up to 2 weeks in the refrigerator, but it won't last that long around here.

Now that I've conquered making peanut butter, I can't wait to try homemade Almond Butter, or maybe Cashews? And, perhaps, adding natural flavoring like honey? Yummy!

Homemade Manwich Sloppy Joes Recipe

I'm constantly seeking new recipes to make things from scratch. This sloppy joe recipe is not only easy to whip up with things you probably have in your kitchen, but it's also budget friendly!

1 pound lean ground beef (I use ground turkey)
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard (spicy mustard works well too)
3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste

In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.

Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
